The way this recipe is written can be very troublesome for an inexperienced baker. First of all, the recipe calls for baking soda, but baking powder is mentioned in the instructions. Second, the recipe calls for honey but this ingredient isn’t mentioned in the instructions. Moreover, the instructions say to preheat the oven in the first step, but the dough needs to be chilled for quite sometime (about 1.5 hours) before baking, so why keep the oven on that whole time?
To the inexperienced baker: it is baking soda, add the honey with the egg, and don’t preheat your oven until 15 mins before putting the cookies in.

      Aarthi,
I’m trying out you recipe today. A couple of things I noticed as I was mixing up the ingredients. In the list of ingredients you say baking soda. Then in the typed instructions you say baking powder. I had to research another recipe to see which might be correct. I went with baking “soda”. Also, in the typed instructions you do not state when to add the honey. Being an experienced baker, I figured it out. Perhaps you could correct these two items. It would be helpful for new bakers.

    FAQs

What is the secret to chewy cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

Why did my ginger cookies not crack? ›

Not enough leavening (it needs to be strong enough to crack the top once it's set) Using a single-acting baking powder (double acting gives extra rise when it gets heated) Not creaming the fat long enough (creaming cuts little air pockets into the fat, which means the leavening has to do less work)

Why are my ginger cookies so hard? ›

“There are some gingerbread recipes that are hard right after baking and need to sit for a few days to soften. Molasses and honey hardens gingerbread, but as the sugar absorbs moisture, it will get softer.”

What makes cookies chewy vs crunchy? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

Do you need more or less eggs for chewy cookies? ›

Double Your Yolks Most cookie recipes call for at least one egg. You can try omitting the white of each egg, which tends to dry out when baked, and replacing it with an additional yolk. Plus, egg yolks have more fat than egg whites, which helps to keep your cookies moist and chewy.

How to get cracks in ginger cookies? ›

A heavy amount of baking soda interacts with the molasses in this recipe to encourage spread. This allows cracks in the dough to develop where moisture escapes, creating that beautiful crackled appearance and crunchy texture. Ensure your baking soda is fresh and active – learn more about that here.

What happens if you add too much butter to gingerbread cookies? ›

An excessive amount of butter makes it where the flour is unable to absorb the combined fat, which causes the cookie to spread too widely and the sugar to carbonize more easily because it's surrounded by too buttery a dough.

Why are my ginger cookies bitter? ›

    - The darker molasses is, the more bitter it will be. specifically called for. It is extremely bitter and dry.

Why do you put molasses in gingerbread? ›

The deep, caramel-like sweetness of molasses pairs perfectly with the warm spices of ginger, cinnamon, and cloves, creating the iconic flavor profile of these classic treats. The choice of molasses over other sweeteners adds a depth and complexity that elevates gingerbread to a cherished holiday tradition.

How do you make cookies soft and chewy vs hard and crisp? ›

Different types of sugars affect the texture because they absorb different amounts of water. Remember moisture is the key! White sugar creates crispier cookies and brown sugar creates chewier cookies.

Why do you put corn syrup in cookies? ›

So, when you mix corn syrup into your cookie batter, all of that moisture will make and keep your baked cookies deliciously tender. The texture of cookies benefits from corn syrup as well. As you combine your ingredients to make your cookie batter, corn syrup will pull some of the surrounding air into your batter.

How do you make cookies stay soft and chewy? ›

Putting a slice of fresh white bread in the container with the cookies will help the cookies stay soft: fresh bread is moist, and that slice will give up its moisture for the greater good: keeping the cookies from drying out. We recommend white bread so that no flavor is transferred to the cookies.

Why do my cookies never turn out chewy? ›

You can try adding more egg to your recipe. Eggs make cookies softer and puffier. It doesn't need to be a lot of egg; half of an extra large egg will make a difference in a basic recipe. You can also swap out egg yolks for whole eggs.

What makes cookies chewy butter or shortening? ›

But, it turns out that margarine or vegetable shortening is the secret to chewy cookies. I still make mine with butter, though.
