I’m guilty of watching TikTok but the only reason I do is for the food. It has some of the most innovating recipes on there and I love turning them into keto creations! It’s worth spending my nights in a bottomless scroll watching home cooks film snappy videos of their recipes.

This keto ramen is one of them. Add simple ingredients like butter, garlic, red pepper flakes, sweetener and everything bagel seasoning makes the perfect spicy and sweet, savory sauce to drench in keto ramen noodles.

What makes this ramen keto?

  • Real ramen noodles – Traditional ramen is made from wheat based noodles that are very high in carbohydrates. Other keto ramen recipes use shirataki noodles from brands like Miracle Noodle to substitute for the Japanese noodle. Let’s face it, shirataki noodles really aren’t ramen and don’t have the same flavor or texture as a true ramen noodles. This ramen recipe uses a low carb ramen noodle from a brand called Immi. These noodles are true ramen but without the excess carbs!!
  • Unique seasoning blend – Sure you could just add the flavoring packet that comes with your noodles, but I suggest making your own keto blend. This seasoning creates a buttery, sweet and spicy flavor without the sugar or carbs.

    Discard the spice packet that comes with the keto ramen noodles. Add noodles to a medium saucepan filled with water and bring to a boil. Boil for 3-4 minutes or until noodles have softened. Strain noodles to remove the water. Set aside.

    Make ramen sauce

    What is TikTok Ramen?

    Tiktok ramen is a recipe that went viral on the social media platform, TikTok. It’s a simple ramen recipe using instant ramen noodles. The seasoning packet is thrown away (or saved for another recipe) and a sweet, savory, spicy homemade sauce is created.

    The sauce for Tiktok ramen is not soup based, unlike other ramen recipes that require you to add chicken broth or make your own broth. It combines butter, garlic, brown sugar, everything bagel seasoning, crushed red pepper flakes and soy sauce. I left the soy sauce as an optional ingredient as some people are sensitive to soy – although you could use liquid aminos or coconut aminos in it’s place.

    Keto ramen noodles

    • Immi noodles – This is the only brand that I have found that is close in appearance, texture and taste to actual instant ramen noodles that come in a package. These noodles are plant based but they are not gluten free. One package of ramen is 6 g net carbs. It’s not the lowest carb option but it is the most authentic.
    • Shirataki noodles – Made from the konjac plant, the shirataki noodle is mostly fiber and many brands are either zero net carbs or less than 1 gram net carb per serving. Konjac noodles are gluten free but have a rubbery texture that some find off putting.
    • Zucchini noodles – When you don’t have access to any type of keto noodle, zucchini noodles or zoodles can be used. Spiralized zucchini will provide extra fiber and vitamins and are a clean, gluten free noodle option.
    • Kelp noodles – Made from seaweed, these noodles are gluten free and low in carbs (3 g net carbs per serving). They are best served with Asian based sauce but can have a crunchy texture.

    Options for toppings

    This is a basic keto ramen recipe but consider adding this other toppings to finish the dish. These will not only add more flavor but they give a stunning presentation too.

    • Eggs – Top it off with a soft boiled egg. When you fork cuts into the egg, the creamy yolk will spill into your ramen and will give the sauce additional flavor.
    • Green onion – Slice up some scallions or green onion to provide a hint of onion flavor.
    • Lime wedge – If you feel like the ramen needs a hint of acid to balance the flavors, serve with a lime wedge. The lime juice will help brighten up the dish.

For the kelp noodles you have to prep them first in a “bubble bath”, the juice of one lemon with 1 Tbsp of baking soda (hence the bubbles), then stir your noodles in there and rub them at the same time for one minute. Rinse it well and no more crunchy. Great for stir fries and prob they will soak up that ramen sauce.
