Simple Cookie Recipes

It’s that time of year when making cookies is a must! Not only do we need to make cookies but we also feel the need to make all different kinds and have big varieties! For the sake of simplicity, I like to keep it down to just a few kinds, but when I decide I want to add a couple more, I’ve got a few go-to simple cookie recipes on standby.

No Bake Chocolate Oatmeal Cookies

These cookies are super simple and are no-bake so they take very little time! My version has no peanut butter since we are a nut-free home.

Be careful, these can get super addicting!

No Bake Chocolate Oatmeal Cookies Recipe

Easy Chocolate no-bake cookies recipe.

Ingredients

  • 1stickButter1/2 cup
  • 1 1/4cupSugarwe use Turbinado, you can use can use regular sugar
  • 1/2cupMilk
  • 3cupsOld Fashioned Oats
  • 3tablespoonsUnsweetened Cocoa Powder

Instructions

  1. On the stove top, mix the butter, milk, and sugar together. Stir occasionally until the mixture is melted together and starts to boil. Boil for one minute and remove from heat.

  2. In a separate bowl, mix together the cocoa powder and the oats until the oats are coated. Add in the sugar mixture from the stove.

  3. Stir well until all ingredients are combined. Let the mixture sit on the counter for about 30 minutes so the oats can soak everything up.

  4. Layer out a piece of wax paper and scoop tablespoons full of the mixture onto it.

  5. Let the cookies *dry* for a few hours on the wax paper before you store them in the fridge.

These I make for my dairy-free, wheat-free son. He loves them! (And so does my hubby!) These are a great little cookie if you are looking for something that is a little bit healthier, lower in calories, and free of all the common allergens.

  • 1/2cupCoconut Oil
  • 1/2cupSugar
  • 1Bananamashed
  • 1 3/4cupFlour I used gluten free flour
  • 1teaspoonSalt
  • 1/2teaspoonBaking Soda
  • 1teaspoonCinnamonoptional
  • 1 1/2cupsOld Fashioned Oats

Instructions

  1. In a bowl, mix together all ingredients.

  2. Drop by tablespoon full onto a greased cookie sheet. You may want to *mash* down the cookies first before baking.

  3. Bake at 375 degrees for about 15 minutes (longer if gluten free). Don’t bake too long or they will get hard.

Simple Peanut Butter Cookies

If you aren’t a nut-free home, these are some great simple cookies to make. So easy and just need a few things.

If you are nut free, you can also make these with seed butter such as sunflower seed butter or pumpkin seed butter. Just keep in mind that the cookies will turn green due to oxidization.

Wondering how to make cookies without eggs? You can use a flax egg in this recipe, however, your cookies may turn out slightly different than mine did. To make, add 2.5 tablespoons of water to 1 tablespoon of ground flax meal. Mix together well and let sit for 5 minutes.

  1. Preheat the oven to 350 degrees.

  2. Add all ingredients to a medium-sized bowl, and beat until fully incorporated.

  3. Roll into tablespoon-sized balls and lay on a cookie sheet. Slightly flatten each cookie using the prongs of a fork.

  4. Bake for 10 minutes in a preheated oven.
