Fall is in the air, and it feels so good!The past few mornings have been cool and wonderful. Now that the nights have cooled a bit, we’re planning our first camping trip for the year in the next few weeks. I’m so excited because it seems like forever since we’ve been, and my son has been asking to go for weeks. There’s nothing better than just disconnecting from all this electronic stuff and enjoying the great outdoors!
I’ll also be doing menu planning for our trip, so that we have some quick and easy meals that will conveniently heat over the fire. My family loves when I make individual campfire packet meals especially since they’re so much more nutritious than your average camping meal like hot dogs.Making and planning quality family meals whether we’re at home or on-the-go is very important to me!
To me, a quality meal is a wholesome, well-balanced meal that is also simple to prepare—because what’s the point of making a super nutritious meal if you’re stuck for hours in the kitchen prepping, cooking and cleaning? So, to save the most time in the kitchen and more quality time with my family, I rely on ingredients that reduce my prep time for recipes. These time-saving ingredients are located in my grocer’s freezer and range from perfectly-portioned, individual meals, indulgent desserts, healthy produce and a wide array of ethnic cuisine options.
When it comes to side dishes and vegetable dishes, frozen selections are a no-brainer! But don’t forget that there’s also a huge selection of main dish ingredients like different types of meats, delicious meatballs, ravioli, pierogiesand more. With my ongoingpartnership with EasyHomeMeals.comand NFRA (National Frozen & Refrigerated Foods Association) I wanted to share this effortless chicken lettuce wrap recipe with youthat’s also vegetarian.
For this dish, I used MorningStar Farms Chik’n Patties. They’re low in fat, taste wonderful, andare completely vegetarian. I just followed the directions on the box to make the patties in the oven, and thensliced them and placed them on top of the lettuce leaves. Then, I topped the Chik’n Pattieswith tomato, onion, basil and balsamic. These little wraps make the perfect, healthy choice for a busy weeknight and everyone will love them!
Don’t forget dessert! After dinner, I served these delicious little single serve turtle pies from Edwards. They have a wide variety of pies to chose from, but this is our favorite. They’re just as tasty as they look!

Bruschetta Chicken Lettuce Wraps

Ingredients:
4 MorningStar Farms Chik'n Patties
4 Boston lettuce leaves
1 medium tomato, diced
3 tablespoons finely chopped onion
2 tablespoons chopped basil
1 tablespoon balsamic vinegar
salt and pepper to taste
Directions:
Follow directions on MorningStar Farms Chik'n Patties package and cook either in oven or microwave. Combine tomato, onion, basil, vinegar, salt and pepper in a medium bowl. Mix well to combine. Slice MorningStar Farms Chik'n Patties and serve on lettuce leaves topped with tomato mixture.
